      <image:caption>Deep blackberry and cassis aroma. Sweet, jammy taste with notes of dried cherries, dark, juicy fruits and a cocoa finish. Saracina is located along the Upper Russion River in northern California’s wine country. The Zinfandel comes from two vineyard sites - one at the alluvial bench in Redwood Valley, the other overlooking Lake Mendocino planted with vines with St. George rootstock. The Malbec is from the Saracina estate vineyard, marked by black clay and gravelly soils at the base of the foothills. The Petite Sirah is from Saracina’s steep hillside vineyards. The 2018 harvest was a winemaker’s dream - following a replenishing, drought-ending rains and a long and even growing season. Picked at full maturity, de-stemmed and gently transferred into fermenters with almost 100% whole berries. Pairs well with mixed grill, roasted vegetables, barbecue and cheddar cheeses.</image:caption>

This Pinot Grigio from Northeast Italy is one of the most captivating Pino Grigios from Alto Adige (think the top-right of the boot of Italy). 1/3 of the wine was in contact with the skins and stems for roughly one year - giving the wine an early and mineral-driven nose supported by baked apple and dried wild flowers. Pairs well with fish and shellfish, poultry, white meats, all seafoods and pasta dishes. Particularly paired well with a clean, fresh goat cheese.</image:caption>

Although a boutique winery in production, Trimbach is the most enjoyed brand of Alsace wine in the U.S. Located in Ribeauville, west of the Rhine in Alsace, the family domaine consists of apx. 70 acres of vineyards located in/around some of the finest grand cru sites of Ribeauville, Hunawihr, and Bergheim. The “Reserve Personnelle” is a designation used by the family only in the finest vintage years and indicates the wine is made from the best of the family’s own vineyard sites (most of which are Grand Cru), as well as older vines limited to a “green harvest”. Pairs well with all fish, especially salmon, chicken, veal, foie gras and mild cheeses.</image:caption>

Light, tannic texture, sour cherry taste with residual sweet finish. This 100% Lambrusco di Sorbara from Secchia in the province of Moderna is bottled before fermentation has completed, with the fermentation finishing in the bottle with its lees. These lambruscos from Sorbara are typically a paler version of this typically inky sparkling wine. The grapes go straight to press, rendering the color the palest of pinks as there was no maceration with the red skins. Pairs great with pizza and any fresh tomato dish like bruschetta, tomato and mozzarella etc.</image:caption>

      <image:caption>Saint-Aubin is a village tucked in a side valley between Meursault and Puligny-Montrachet - in the southern end of the Côte de Baune. A large portion (two thirds) of the vineyard area is designated Premier Cru, Chardonnay being the predominant grape variety. The appellation is well-known for it’s pleasing, affordable white wines. Young chardonnay (great rapper name, tbh) from St. Aubin tend to have notes of white flowers, citrus, pear and wet stone. With age, they typically have rich aromas of beeswax, honey and marzipan. Spicy, toasted aroma with maybe a hint of eucalyptus. Light acidity with a woody bitter taste and notes of ripe fruits. Longer finish with earthy notes. Would pair well with buttery dishes, roasted vegetables and roasted chicken.</image:caption>

      <image:caption>Domaine Bernard Dubois is a tiny domaine of 7 hectares based in the village of Chorey-Les Beaune (just below Clos Margot). The current owner and winemaker is the 5th generation in his family to make wine in the village, focusing on creating terroir-pure wines around Chorey and Savigny, with sustainable practices and small yields. Once in the cellar, extraction is kept to absolute minimum - unfined and unfiltered, only indigenous yeasts are used and wines are aged and fermented in barrel. Burgundian reds are ultra-dependent on their terroir to give them nuances in flavor. They’re typically lighter with medium acid and lower tannins. Pinot Noir is almost always the grape of choice in Burgundy (with the large exception being Gamay used in the South). Almost savory on the nose (maybe notes of tomato?), as well as woody and plum aromas. Medium bodied with good tannin structure. Tastes of bitter tannin and cherry tart with earthy notes being most forward. Long to medium finish. Would pair well with chicken, any cooked tomato sauces/dishes, game and veal.</image:caption>

It’s a rare 4th generation Cru estate with villages that date back more than 2,000 years ago. Bright pruple in color. Fragrant violets, red fruits, berries and red cherries. Very light tannins, refreshing taste of sour, juicy red fruits with an acidic finish.</image:caption>

      <image:caption>Château Laribotte is a family estate that dates back six generations - back to the end of the French Revolution. Located in the village of Preignac, south of Bordeaux, on the left bank of the Garonne river, mists cover the vines every morning creating the perfect conditions for botrytis cinerea fungus AKA “noble rot”. This gives the sweet wines of Sauternes their uniquely complex, concentrated character. As a result of noble rot, the wine is rich in sugar as well as residual sugar, and is fermented for about 3 weeks. Grapes are handpicked late - when they’re overripe - and when their juices are further concentrated by noble rot. This makes the grape skins more permeable, allowing their water to evaporate and aromas and sugars to concentrate. On average age of the vines is 60 years old. This Sauternes is 90% Semillon, 8% Sauvignon and 2% Muscadelle. Brilliant golden color. Aromatic notes of flowers, honey, lemon and peach jam. Fruity and candied flavors, and notes of dry apricot. Long finish and slightly acidic. This would pair well with foie gras, white cheeses and savory desserts.</image:caption>

      <image:caption>The sub region of Saint Émilion in Bordeaux is recognized across the globe by wine experts as one of the world’s premier wine producing areas. It’s primarily associated with the production of high quality, flavorful blended red wines, with the blending techniques and methods having been passed down through generations to maintain the reputation and popularity of Saint Emilion wines. Most are Merlot based with additions of Cabernet Franc and Cabernet Sauvignon. Planted in one single block, the Corbin vineyard is located in the north west of the Saint Emilion appellation, just next to Pomerol. Chateau Corbin is one of the oldest estates in Saint Emilion - dating back to the 15th century. Two soils make up the vineyard - ancient sands surrounding the château over an iron-rich clay sub soil, giving wine delicacy and finesses; while clay on the Pomerol side of the estate brings the wine it’s richness. On average, the age of the vines is 30 years. As is the tradition of Bordeaux estates, Chateau Corbin also passes down the chateau via lineage. However, one thing I find particularly interesting is that their line of succession has been passed down from mother to daughter, for multiple generations (maybe that’s why the wine is so refined and elegant! ) Deep, jammy red fruits on the nose with a hint of cedar. Medium body with medium tannins. Medium acid, and slight savory taste. Notes of cherry, and softer, ripe black fruits.</image:caption>

      <image:caption>Bordeaux Pauillac wines are rich and concentrated, full-bodied reds with grippy tannins with notes of cassis, cedar and cigar box spice. A quintessential Bordeaux red would be a blend with a base of high-quality Cabernet Sauvignon. Pauillac is located on Bordeaux’s Left Bank Médoc region and has well-draining gravel soils, which translates to high quality wine (which age very well). Gorgeous, dark red in color. Herbal bouquet, slightly fruity, oaky with notes of espresso. Medium to full-bodied with smooth tannins. Good acidity and full of dark fruits like black currant, plum and cherries.       <image:caption>As a family farm, the Francesco Boscis estate is run by Mario Boscis, his wife, and their two adult sons. They not only have the best high-altitude, old vines of Dolcetto in the Dogliani appellation, but also grow hazelnuts, keep bees and cattle on their farm. Dolcetto di Dogliani has always been acknowledged as the finest expression of the variety. The Bosci’s old vines, in particular has a red stem, very low yields and small berries with thick skins. At this elevation and a slightly cooler climate, the grape was the first of choice for all of the best exposures since it was a bit too cool for Nebbiolo. Soil here is full of calcareous clay - giving the wine a powerful bouquet and mineral structure. Bright, ruby, almost purple color with a light texture. Fresh, fruit-filled aromas of strawberries, raspberries with a very acidic attack with young tannins. Tastes of vibrant, younger berries, cherries and cranberries and a short to medium finish. This can pair well with black-pepper seasoned dishes.</image:caption>

The clusters are soft-pressed and then fermented in stainless steel, where it matures for 8 months before bottling. Bright yellow to light green. Aromas of ripe fruit - honey, melon and peaches on the nose. Medium bodied, with low / balanced acidity to allow for a very smooth wine. Flavors of peach, apple with honey and pear on the finish.</image:caption>

      <image:caption>Vernaccia grapes of San Gimignano undergo a brief maceration, separated from the bunch and crushed - the juice is is taken away from the skins, allowing for powerful aromas and concentrated flavors. Following the maceration, a static decantation of the must and finally, the wine is fermented in steel vats. An extended fermentation enriches the wine with floral aromas, complexity and intensity. A pigmented, straw yellow, the aroma is earthy, herbal and has a hint of almond or nuts. Very smooth with low acidity, fruity with notes of tropical fruits and citrus, with a slightly savory hint. A taste of minerality lingers on the finish.</image:caption>

      <image:caption>Brunello di Montalcino, Tenuta Col d’Orcia, 2018 As one of the original estates of Montalcino and now the largest certified organic estate in Tuscany, Col d’Orcia is a leader in Brunello di Montalcino. It’s name translates to “the hill overlooking the Orcia River” due to it’s position in the undulating hills between the Orcia River and Sant’Angelo in Colle. Southern orientations provide the vines ample exposure to sunshine and the soils comprised of limestone and marl facilitate natural irrigation. Manual harvested with rigorous selection of the best grapes in the vineyard and cellar. 18-20 day fermentation on skins in shallow stainless steel tanks extract tannin and color efficiently but delicately. The wine is then aged for 3 years in French oak casks, followed by further refinement of at least one year in bottle prior to release. Muted dark red with a heavy to medium body. Aromas of leather, dried florals and cedar. Rich, earthy taste with hints of dark cherry, mushrooms and other red fruits. Good, smooth and balanced tannins with a long, savory finish.</image:caption>
